PBfit Protein Balls & other quick healthy recipes!

Throughout the week I am always on the go, running errands, working, etc. I feel like I hardly ever get down time and so for me, meal prepping or having access to quick and healthy meals is very important. Everyone kept asking me for recipes so today I’ve decided to share just a couple of my quick go-to meals and snacks!

First up PBfit Protein Balls! They are so yummy and perfect for a grab and go snack, or even just to have when you are craving something sweet.

What you’ll need:

  • 1/4th-1 cup of Honey (amount depends on how much honey flavor you like)
  • 1 and 1/2 cup of Rolled Oats
  • 1 and 1/2 cup PBfit Peanut butter powder
  • 1 cup PBfit Chocolate Protein Powder

Directions:

  1. In medium bowl make 1 and 1/2 cup of PBfit Peanut Butter (combine powder with 1 cup of water)
  2. In large bowl combine all ingredients listed above.
  3. Once mixed, roll out tablespoon sized balls, or make size to your own preference.
  4. I will put rolled balls straight into my tubberware or container. I use different sizes of containers so then when I’m running late I can grab a container with a lot or a little, depending on how man I want to eat.
  5. Refrigerate for 1 hour or until cold. You can also freeze them if you prefer.

Simple Egg Whites With A Little Extra Protein. If you know me eggs aren’t usually my favorite, but they are super quick to make and I’ve found ways to make them that I like! Some of these might seem a little weird but I promise they are good!

What you’ll need:

  • Egg Whites. I typically buy egg beaters because they are easy to pour and ready to go.
  • Cottage Cheese. This is the weird ingredient, I know but it makes all the difference & adds protein.
  • Spinach.
  • Cooked Ground Turkey (optional)
  • Any other veggies you’d like.

Directions: 

  1. Warm non stick pan on stove. Set on medium.
  2. If you are adding ground turkey, warm this in the pan first.
  3. Add egg whites-if no ground turkey, this is what you’ll add to the pan first.
  4. Add 1-2 spoonfuls of cottage cheese.
  5. Add spinach.
  6. Add any other veggies or ingredients that you like.

Again, it’s personal preference on what you like with your eggs! And the amount of each ingredient being added will depend upon how much you want to make for yourself. Super simple, full of protein and done in minutes!

Chicken Wraps. These are super quick and easy to make! I started making these because I wanted to create something from the ingredients I had in my fridge and this is what I came up with. Plus it’s nice because you can mix it up with the ingredients you are using to have variety.

What you’ll need:

  • Cooked Shredded Chicken (I usually prep this weekly with my instant pot and just keep it in the fridge)
  • Whole Wheat Tortillas
  • Avocado or Guacamole
  • Italian Salad Dressing
  • Mozerella Shredded Cheese

Again, like I said you can mix up the ingredients! Use a different dressing or cheese, skip the avocado and add spinach, etc.

Directions:

  1. Grab # of tortillas for desired # of wraps. I usually do two at a time.
  2. Place chicken in middle of wrap.
  3. Add dressing of choice.
  4. Add desired amount of cheese on top.
  5. Add avocado or guacamole.
  6. Wrap and enjoy cold or heat for 30 seconds in microwave to enjoy hot!

QUICK AND HEALTHY SNACK OPTIONS:

These are some things that I usually snack on that are super easy to grab and go!

  • Apple slices and babybell cheese
  • String cheese and sliced lunch meat
  • One Protein Bars
  • Naked Juice
  • Protein Shake
  • Organic Apple Sauce Pouches from Costco
  • Annies chedder crackers
  • Hard Boiled Eggs
  • Avocodo toast
  • Chips & salsa
  • Oranges
  • Halo Top Ice Cream
